Vegan Golden Oreo Blondies

It’s true; I’ve got some pretty sweet vegan friends.

It was one of my favorite vegans’ birthday a few weeks ago, and my friend Abbey and I got together to make a special birthday treat just for him. Jimmy’s a fan of vanilla over chocolate, so we were wracking our brains to think of something he’d really like.

Enter: The birthday Vegan Golden Oreo Blondies!

You’ll need:
1/3 cup coconut oil (we used Trader Joe’s brand)
6 ounces unsweetened vanilla almond milk
3/4 cup packed brown sugar
1 teaspoon baking powder
1/2 teaspoon salt
1 tablespoon vanilla extract
2 cups all-purpose flour
8 ounces dairy-free chocolate chips (we used Giardelli semi-sweet chocolate chips)
Sprinkles

Instructions:
Mix together the coconut oil, almond milk, and brown sugar first. Add the baking powder, salt, and vanilla next. Mix in the flour last, add the chocolate chips, and pour into a greased 9×9 baking dish. Then bake at 350 degrees for 30 minutes or until the edges are lightly browned. I like everything slightly underbaked, so only kept them in the oven for about 28 minutes.

Right when you take the blondies out of the oven, crumble golden oreos over the baking sheet. Press the large pieces of oreo into the surface of the blondies. If you’re making these for a birthday, molest the top of the blondies with some colorful birthday sprinkles. They’ll melt into the cream of the oreos.

It’ll make the birthday guy/girl a happy one.

You guys salivated all over these guys via instagram and demanded a recipe (down, Jillian). I don’t leave my friends hangin’.

Now, go make these and make someone else’s birthday awesome. I also recommend delivering a card as good as this one to accompany the delicious masterpiece.

Vanilla Oreos are so good! I can’t buy them anymore bc I literally ate an entire box once, but it was so worth the sugar hangover!

Oreos are vegan?? I’m not a vegan, but I guess I assumed the Oreo creme filling had creme in it, and that’s from cows? Maybe I’m totally nuts haha … I’ve never examined the ingredients on a bag of Oreos before! Regardless, these look delicious!

I just looked them up out of curiosity, and was about to tell you that I was wrong haha! Wow, awesome, but also a little scary to see what that “creme” is really made of!! ;)

Hahah, I thought the same exact thing. Oreos are vegan? But what about that creme filling?! I went right to the nutrition label on Nabisco’s website. Vegan indeed. But boy will I re-think buying them the next time I’m craving their “creme” filling.
These Blondies look super fantastic regardless of the sketchy Oreo ingredients! :)

I do love that oreos are vegan – except why did you use MILK chocolate chips for this vegan recipe.. ? :)

Oh, I didn’t. The Gihardelli chips are vegan! I guess I should reword that.. I meant I didn’t use the dark chocolate ones! Thanks for catching that.

Wow I had no idea that oreos were vegan! That’s good to know! And this recipe looks delicious! I love blondies and what a fun twist that these have an oreo top! I also love the addition of sprinkles– definitely a birthday essential!

true story, one of my vegan friends wants to open a vegan restaurant called “the fat happy vegan” since vegans are totally not necessarily healthy. ;)
