My Bowl Runneth Over [with Spaghetti Squash]

It was a good Tuesday.

An entire section of clearance wine at Food Lion? The typical wine connoisseur would probably say, “What’s wrong with it?”

I say “suh-weeeet” and grab 5.

And “Who wants to come over for wine night?”

Upon meeting homegirl Jamie at the gym for our usual workout date, she told me she had a present for me.

When she told me it wasn’t glitter stunna shades or a brand new pair of Asics, I picked myself up off the floor to realize she had a pretty awesome gift from Trader Joe’s with my name on it.

Sugar chocolate coffee bean Trader Joe’s grinder. I’ve been wanting to try this sucka.

Has anybody tried this granulated gold on anything I’ve gotta try?

[BTW, a word to the wise – screw the lid on tight before using this stuff.. Jamie had a small travesty in her kitchen when she tried to put this on cereal.]

And know what else was pretty great? With Meg’s coaching via my 193981 texts messages of questions, I (quite literally) took a stab at roasting a spaghetti squash.

Don’t forget to stab it a few times with a fork (or a sharp knife). Apparently, bad things happen if you forget this step.

I threw the squash in a baking dish and roasted it on 375 degrees for an hour. Then, I cut it in half as I prepped a sauce of Prego Veggie Heart Smart, asparagus, garlic, baby bell mushrooms, and Mrs. Dash onion & herb blend.

Looks like I need a bigger bowl for all this s’ketti goodness.

…now we’re talkin’.

Trust me on this. It’s all kindsa wonderful.

And just like that, I’ve got a new favorite dinner.

I love spaghetti squash…but I have never stabbed mine first and it worked out okay. no explosions! I will definitely do that next time though, just in case.
Love the glitter placemats, haha.

That looks really good! I’ve only tried making spaghetti squash a time or two and haven’t quite mastered it. This makes me want to give it another go!

Yup…spag squash is totally amazing. My biggest indulgence with it is by adding butter and parmesan….
Also…count me in for wine. Anytime!
I have not experienced the grinder, and I’m slightly afraid I’d become an addict if I purchased one…but it looks amazing!

While I do love spaghetti squash, I never understand those that say it tastes exactly like pasta! No, no it doesn’t pasta tastes like pasta and this is not it (even tho I do love it!). I am sooo in for a pseudo wine date – you crack open a bottle there, I’ll crack open one here and no one can bash us for drinking alone..bc really we aren’t.

Hahaha, thanks for the shout-out. The thing is I DID stab my spaghetti squash.. but I should have apparently stabbed it multiple times. Spaghetti squash is definitely my favorite veggie/pasta substitute. If they weren’t so dang expensive I’d eat them every day! Luckily, my friends’ parents have been growing them in their huge garden and they are sending me like 8 next month!

LOVE finding wine on clearance .. especially when they have Alice White Chardonnay on clearance, as they did in your picture! If you haven’t tried it yet, and like white, light wines IT’S A MUST TRY. it’s my favorite & even when not on clearance, it’s pretty cheap, less than 10 bucks for a bottle. I did a review about it on my blog, it made my “favorite things” list. πŸ™‚

sketti squash is AMAZING. okay and this is going to be weird but don’t let it be. take some sketti squash and sprinkle cinnamon and your new amazing grinder (that is life changing btw) and eat that together. weird i know but it’s SO good. trust me.

I honestly have a spaghetti squash in my kitchen that I’ve been too scared to use! Everytime I walk past it I’m like “I’m waiting for a good recipe- I did not shell out ££ just to ruin you!”

You make it look SO easy- I’m def giving this a go this weekend!

How do you like your new grinder? I have one but to be honest, I always forget to use it! But I should try and bring it back! And thanks for making the spaghetti squash process look so easy! I’ve been wanting to make it but it sounded so hard, but I think that even I can do this!! YUM!
